Social Fine Dining Experience

​Hyssop is the social dining experience which offers fine dining food to the local communities. We are aiming to connect people through the food we create in a relaxed atmosphere. It is the place where people socialize, share the time together, and enjoy luxurious food. We showcase local seasonal Dutch produce in our clean & light menu packed full of flavor and creativity.

Captivating Nature 

​Both chefs, Nathanael & Ayane, are very enthusiastic towards wild produce, strongly believing in foraging, local producers, and urban growers. We make our menus reflecting around what nature offers each season

​In our kitchen, fermentation revolves heavily around what we do as we have both worked in Nordic michelin restaurants and Ayane's Japanese heritage. We believe in what you consume matters, and the benefits and taste of some ferments are just simply amazing. Using our years of experience, we try to have a "0 waste kitchen". Fermentation is one of the key techniques for reducing food waste by preserving food.

Grow More Food

​in the City

We are aiming at designing sustainable urban food cycle system in a city. We encourage urban farming, and provide the locally grown fresh food to the communities with less food waste.

We invest in in free space around urban area, redeveloping and designing the space more interesting and attractive for local people. The green space is to be designed to produce as much food as possible and efficiently in the limited urban space. 

 

We collaborate with various local entrepreneurs such as urban designers, architectures, local farmers to develop the innovative plans. If you think you can be the part of this idea, we would love to hear from you.
